If I keep harvesting what they don't eat themselves, will it continue to grow regularly like outdoor grass assuming I am watering properly? After harvesting, I'm not sure if I'm supposed to continue to just mist it every day or keep the soil moist or what, but I'll be looking into it.

Cut as much you need and let the rest of the grass continue to grow. The grass that you've cut will grow back but the second growth has much less nutritional value. You are NOT gluten intolerant!
